A Toute Heure

With family roots strongly imbedded in the northern “Minho” region of Portugal, Alexandre Gomes has brought his grass roots culinary background with a fine dining flare to ATH.

At the age of 6 cooking with his mother in the family kitchen, learning how to make Rissois and Caldo Verde, and learning how to make breads with his father (who is a baker) peeked Alex’s interest.  A long culinary history of family owned cooking establishments, and a Sunday tradition of family food-focused gatherings, sparked the culinary interest that later became a career for Alex.

Beginning his professional culinary journey, working at The Hilton Short Hills, led to an education at the Culinary Institute of America.  After graduating, Alex found himself working at some of NJ’s top restaurants – Le Rendez Vous Bistro, Chez Catherine, Mompou Tapas and multiple years of corporate and private catering with E.V.O.D. Catering– led to being awarded the Best Chefs America recognition three years in a row.

Marco was born in Fraine, a small town in Abruzzo Italy, son of parents who owned a “forno”, or bakery and pizzeria.  It was here where they made a living, along with tending to the fields for wine harvest and cultivating the land to grow crops for each season.  Marco remembers days of going to the family farm, past cows, goats and sheep. He would collect eggs, and while still warm, get them back in time to have his mother cook over the open fire – his own “farm to table.”

Alex and the new proprietor’s of ATH, Marco and Nathally Florio, discussed their journey through their culinary past.  They quickly realized that they all valued family and the strong cultures that influence and drive their culinary desire.  Between Marco’s passion for Italian cuisine and Alex’s Iberian roots the two knew that an amazing culinary venture lay ahead.

Sea scallops from Barnegat Bay showed the kitchen at its height . . . it was another plate that neglected style nor substance . . . Chef Gomes and the Florio’s, are not just worthy, they are world class

It’s nice to see a restaurant that had a following continue its tradition with new management geared to building on the experience that came before. As the chef put it, “All we’re doing is making what was already good, better.”
— The star ledger

"A crisp, pan fried bass, its flesh delicate and moist, dazzled on its bed of warm faro salad, chickpeas, fiddlehead ferns and a touch of beurre noisette. Together, Gomes and the Florio's have breathed new life into ATH, as it's called, while preserving key elements it's regulars loved"
